Soppressata del Sannio

In tutta la provincia di Benevento si allevano suini di razza Landrace, Large White e Casertana, a base di prodotti naturali tipo mais, crusca e ghiande; è dalle parti migliori di tali suini, come il filetto e le spalle, che si ricava la soppressata del Sannio, un salume pregiato che vanta una tradizione molto antica. Per ottenerla, le carni vengono tagliuzzate in pezzi molto piccoli, salate e condite con pepe nero in granuli, per poi essere impastate a mano e lasciate riposare per alcune ore in recipienti forati per permettere lo scolo delle acque. La fase successiva è l'insaccatura, anch'essa molto particolare perché vengono utilizzate le budella più larghe del maiale, preventivamente lavate e aromatizzate per almeno 24 ore in una soluzione di acqua, sale e bucce di agrumi, e poi riempite a mano con l'impasto pressato in un canovaccio. Mentre s'insacca la carne, vengono aggiunti dei piccoli cubetti di lardo dorsale che caratterizzano il prodotto poiché lo rendono più morbido saporito. Al termine dell'insaccatura il salume viene forato con un grosso spillo e legato con spago a mo di rete in modo tale da pressarlo ulteriormente. Infine, si appende a pertiche di legno o di canne e viene fatto essiccare per circa un mese, al termine del quale la soppressata viene conservata intera in recipienti di vetro o ceramica, totalmente ricoperta da sugna fusa oppure da olio extravergine di oliva.

While the meat is shaped, small cubes of dorsal fat are inserted with to make the product softer and tastier. At the end of the shaping, holes are pierced in the meat with a big pin and the meat is tied with cord like a net to press it more. In the end it is hung from wood or cane structures and left to dry for about a month. The soppressata in then preserved whole in glass or ceramic recipients, totally covered with melted suet or in extra virgin olive oil.
