I fagioli lardari, detti anche "tondini", in virtù della loro forma rotondeggiante, sono una coltura presente nella provincia di Napoli ed in particolare nel comune di Agerola. Si tratta di un fagiolo bianco di piccole dimensioni, che si presta all'essiccazione; la sua buccia è tenera alla cottura, ma il seme è resistente e il sapore intenso e caratteristico. Secondo l'antica tradizione, le piante vengono "incannate", cioè fatte arrampicare su sostegni costruiti con canne, oppure consociati alle piante di mais da granella; il baccello viene raccolto ancora acerbo e lasciato maturare al sole fino a quando non si essicca, momento in cui viene battuto per separare i legumi. è una specie particolare, caratteristica di un'area molto circoscritta, e proprio per questo rappresenta un ingrediente fondamentale per piatti tipici della zona, come la pasta e fagioli e le minestre di verdure.

Lardaro beans, also known as tondini for their round shape, are a common cultivation in the province of Naples and in particular in the town of Agerola. It is a white and small bean that is good for drying; its skin is tender when cooked, but the seed is resistant and the flavour intense and characteristic. According to an ancient tradition, the plants are "incannate", that is they are made to climb on supports made with canes, or they are associated to grain corn; the pod is picked when green and left to mature and dry in the sun at that time it is beaten to separate the legume. It is a special variety, characteristic of a specific area, and for this reason it's a fundamental ingredient in the area's typical dishes, like pasta with beans and vegetable soups.
